In this demonstration, I initially honed the knife edge using the stock KME diamond plates at a 22-degree angle per side. Then, I progressed through the 1K, 3K, 5K, and 10K Chosera stones.
There’s a total of 8 Chosera grits available:
400, 600 & 800: Ideal for profiling and repairs, transitioning seamlessly from the stock KME diamond plates. These stones yield an aggressive, textured edge. The 800 stone delivers a robust “working” edge.
1K, 2K, 3K: Best suited for light repair and maintenance, refining the edge to superior sharpness levels. The 1K stone creates an excellent “working” edge, while the 2K and 3K produce a finely slicing edge with just the right amount of “bite.”
5K & 10K stones: These stones excel at polishing and refining the edge achieved by the 1K, 2K, and 3K stones. They elevate the sharpness to effortless precision, allowing the knife to glide through materials effortlessly. The 10K stone reaches a level where it can even be used for shaving. It serves as an excellent base for further refinement using strops and compounds compatible with the KME system.
