The Master Kuo GL340 Long Taiwan Tuna Knife is a big fish knife with a long, straight blade that is 340mm, or 13″ long and 80mm or 3″ high. It is used to make long lateral cuts as well as cross sectioning cuts on large fish like Tuna, Mahi, Swordfish, Grouper, or for clearing the height of your BBQ pork belly or brisket. A custom made leather sheath is optional.
Traditionally, the GL series knives have been used in conjunction with the Master Kuo G series Taiwan Tuna Knives to make long lateral cuts, and/or cross cuts across the spine. It is kin to a Japanese maguro bocho.

Knife care: Keep clean with warm water and soap. Towel dry immediately. Do not put into dishwasher. Stainless clad outer steel will not rust, but exposed SK5 core edge steel can show signs of surface rust over time. Most surface rust can be removed by sharpening the edge.
