The Master Kuo GL series knives Tuna GL390 is big fish knife with a long, straight blade that is 290mm, or 15.5″ long and 80mm or 3″ high. It is used to make long lateral cuts as well as cross sectioning cuts on large fish like Tuna, Mahi, Swordfish, Grouper, etc. The GL-270 looks and acts like a very large chef knife that can cut through fish bones, and is almost always accompanied by a G-5 XL, G-5 2XL or G-5 3XL. It is kin to a Japanese maguro bocho.
This blade is stainless steel cladding with a Japanese Carbon steel core, and a stainless steel handle. Hardness is RC 60-61. It is also available in 300mm (12″), and 360mm (14″)

Knife care: Keep clean with warm water and soap. Towel dry immediately. Do not put into dishwasher. Stainless clad outer steel will not rust, but exposed SK5 core edge steel can show signs of surface rust over time. Most surface rust can be removed by sharpening the edge.
